In the spring of 2009, a dream came true for us. We broke ground on the first phase of an organic vegetable and herb garden located in the fertile Sonoma soil of Kunde Estate Winery.
We’re excited about featuring the absolute freshest produce on our menus, growing flavorful and unique heirloom varieties, increasing our team’s connection and appreciation for food and having the ability to compost our food trimmings back into the garden.
Garden produce is used at our parties throughout the Bay Area. Clients that book Componere for events at Kunde Estate Winery’s enjoy food and wine from the same terroir and have a unique story to share with their guests.
Freshness
We can pick a perfectly sun-ripened tomato, with no concern about it being too ripe for the rigors of shipping or storing, and have it at our Emeryville kitchen in an hour still warm from the sun. Burgundy speckled Devil’s Tongue lettuce, picked in the early morning and still wet with dew, can be served at an event that same day.
Flavorful Heirloom Varieties
Tiny, pea sized red currant tomatoes, sweet French heirloom St. Valery carrots, shiny silver Italian cardoons and Flamingo pink chard are a few of the vegetables growing in our garden. We scour seed catalogues, old gardening books and specialty nurseries for the most flavorful varieties.
Respect and Care
Our cooks gain a unique appreciation of food when they understand the work and care that has gone into producing it. As they work in the garden the deeper respect for ingredients and resulting attention to detail can be transformative.
A Complete Circle
It’s a complete circle: planting a seed, watering it and watching it grow, cooking and serving it with care, and finally composting the peels and trim back into the garden.
