Ingredients in their seasonal peak simply taste better. To prove this point one needs only compare a tomato in January to a tomato in late August.
There can be broad fluctuations in which items come into and out of their peak depending largely upon the weather of each particular year. Many items are generally available throughout the year, such as onions, garlic, shallots, carrots, celery and potatoes, to name a few. Specialty items within these categories, such as spring onions, green garlic or new potatoes, are at their peak at certain times. There is also often overlap, e.g. fall produce into early winter, summer into early fall.
